What did you cook or eat today: July 2025

Shredded potato with a red and green cayenne, shishito, cilantro, and butter. Scrambled egg with Sriracha.

I think it was on Instagram the other day, I came across a recipe for a Mediterranean tart.
I've never had a Mediterranean tart.
Let me rephrase that; I've never prepared or eaten a Mediterranean tart, so I investigated and prepared one. It's absolutely delicious (although I can't be sure it's an authentic Mediterranean dish) and includes all those delightful ingredients which are commonly used in Med cuisine.
This one had grilled aubergines/eggplants, grilled courgettes/zucchini, grilled onions, grilled peppers and a reduced tomato sauce base. I put some baby mozzarella on top, because that was all I had, but feta or goat cheese would be much, much better. No eggs, otherwise it'd be a quiche.

We threw a bag of instant potatoes out. I have no idea where it came from.
Anyway wife biffed it as we don't use it.

I don't eat them but I had some in the pantry awhile back for some reason. We used it to bread fish once when I was out of breadcrumbs. Turned out nicely. I prefer real potatoes for mashed. Years ago when I was very young I had mashed potatoes that came from dehydrated potatoes and they were awful. I know that they have probably vastly improved in the past 40 years, but it's a mindset thing. I'd eat them if someone made dinner for me though, just to be polite
