What did you cook or eat today (June 2025)?

Have made up three Mexican Lasagne’s, one for eldest son to take back to Bristol with him, one for my Pops if he’s discharged tomoz and one for myself and the youngest later this evening.

Before baking obvs. Got some vegan herby cream cheese and added some onion granules, garlic powder and salt to it to give it some depth, am very happy with that little bit of pepping it up.
There are nice little dollops in there under the grated cheese for the occasional oniony garlicky creamy cheese surprise bites.
 
What is a Mexican Lasagna? :eek:
It's a spicy chilli rather than a ragu. Heavily spiced and herbed components predominate everything including the cheese topping.

Cayenne pepper lifts a lot of it, along with jalapeño peppers (tamed peppers for us) to the extent herby cheese and cold sour cream dolloped on the top make it very, very moorish 😋

Tbh it's much more satisfying than normal lasagne, fantastic with a glass of red.

Not sure about yours, but here, a characteristic would also be substituting tortillas for the pasta.

Mexican lasagna, back in the ‘80’s, was really popular here. I remember the place where MrsT and I went for our first date, non-chain sort of “Americana” place (meaning all sorts of different things on the menu…a little Italian…a little Mexican…a few burgers…), their signature dish was Mexican lasagna, and it was excellent!

I don’t know why, but it sort of fell out of favor, and now you have to know where to find it around here.
 
Not sure about yours, but here, a characteristic would also be substituting tortillas for the pasta.

It's not something that ever hit here. So I call it Mexican lasagne because I'm using chilli and strong spices for a lasagne made with lasagne sheets.

Happy to try any version, I think it's a great dish. Very filling and comforting at the same time.

Bingo on the tortillas. It cooks faster too!

Stouffers makes one but I've never tried it. I'm sure if you made one it would be way better.
