It's not something that ever hit here. So I call it Mexican lasagne because I'm using chilli and strong spices for a lasagne made with lasagne sheets.Not sure about yours, but here, a characteristic would also be substituting tortillas for the pasta.
Mexican lasagna, back in the ‘80’s, was really popular here. I remember the place where MrsT and I went for our first date, non-chain sort of “Americana” place (meaning all sorts of different things on the menu…a little Italian…a little Mexican…a few burgers…), their signature dish was Mexican lasagna, and it was excellent!
I don’t know why, but it sort of fell out of favor, and now you have to know where to find it around here.

Next time take pics pleaseLast night I did corned beef and carrots, cabbage and mash. Mustard sauce. Bit of corned beef leftover. Daughter made apple crumble. It was good.
