What did you cook or eat today (June 2025)?

Thai today!
We started off with Thai spring rolls filled with shrimp (cold rolls, wrapped in rice paper) . Then we had what was called a fried egg salad, with green pawpaw, peanuts, noodles, a divine sweet/sour dressing and the eggs o the bottom.
Mains were crispy caramelised pork (yes, I tried some - excellent) and fish in green curry sauce.
All the flavours of Thailand were there except the fresh chiles. That caused me to ask for a ration of hot chiles from the kitchen to spark things up a bit.
When we got outside, my friend said "we forgot to take pictures!"
Sounds very good! I miss buying fresh Thai Chili's. I can get them here if they're in season and I drive 180 miles round trip...

(Yes, I'll do it as long as can find some seaweed on the way...) 👍

I prepared my crust then added the toppings. Chicken, herbs, mushrooms, bell pepper, onion, garlic, spinach, asparagus, fontina, provolone, goat cheese, and mozzarella. No after pics, we devoured it.

SandwichShortOfAPicnic I tried out my pancake maker last week - set it to heat up on med - and the electrics tripped out wihle it was heating up Reset the electrics and tried again and it was ok. After cooking I even turned it up to high and the electrics were ok. So idk why they tripped on initial use.

Anyhow - I made a fresh lot of pancakes today, next week I'll test waffles

Nice 👍

Yesterday evenings jalfrezi, onion bhaji topped pie.
My version of jalfrezi rather than a traditional one because I use leeks and add babycorn so the veg count is higher and I like to velvet the chicken breast before frying to keep it soft n juicy.

Before it went in the oven, sorry no after pic.
Sprayed the bhaji topping with a bit off garlic oil to keep it nice.

Crumbled onion bhaji’s make for a tasty pie topping. Will definitely to that again. Well providing M&S keep making the lazy part - onion bhajis with 100% gram flour rather than the ubiquitous wheat flour.
