What did you cook or eat today (March 2026)

Smothered chicken in onion gravy, with mash, plus peas and carrots.

I forgot snapshots (my brain is a mess with everything) ... I had 3/4 of jarred Alfredo Sauce that had be used, so on the fly:
Poached & Diced B/S Chicken Thighs
Cooked Whole Grain Penne Pasta
Defrosted & well drained, chopped Spinach
That leftover jar of Sauce
Freshly grated Parmesan Cheese
A goodly crack of Black Pepper
A hefty splash of half&half to rinse out the jar and thin it all out a touch (I did reserve some of the pasta water, but it wasn't needed)
All of the above combined (in the same pot that I poached the chicken and then cooked the pasta-one pot meal!) and portioned into individual serving containers
Topped with heavily Buttered Toasted Homemade Bread Crumbs and more grated Cheese
All ready for the microwave oven when the diner chooses (my mom and Gal Pal)

I had a large "tasting bowl" of the above Pasta Bake and I deemed it - ONO (that's delicious in Hawaiian) !!
