Smothered chicken in onion gravy, with mash, plus peas and carrots.
What's Yucatan style pickled onions???Shredded pork tacos adovado from leftover braised pork tenderloin a couple of days ago that needed using. No pics unf. Guacamole, seared tomatillo salsa, and 'pickled' onion Yucatan style. Also made some red onion balsamic marmalade. Was a condimental cooking session.

The middle one. It's basically a common Yucatan onion salsa/pico de gallo style made with chopped red onions, minced fresh habanero or hot red chile to taste, Seville/bitter orange juice (or tart citrus juice) and/or vinegar, salt, black pepper to taste and a little sugar if needed. I have a jar of brine fermented hot red chile that I use for this when not using fresh.What's Yucatan style pickled onions???
