It's been a while since I made it - it's from Pim Techamuanvivit's perfectly propotioned recipe saved from her now definct blog - it goes with so many dishes too - not just Thai - shrimp fried rice tomorrow and its also going in DanDan noodles. I've been drizzling on all sorts 😅 The flavour profile is always amazing. Pim is said to eat it on bread like jam 🙂

It's relatively easy - or easier in this Asian ingredient-deprived location - for me to get hold of the ingredients for this than it is to get hold of fresh items like lemon grass or galangal for eg, not to mention more esoteric other bits.
