For cooking are you using ripe avocados or ones that are pretty firm/hard to slightly underripe?
Cooking avocado doesn't ripen it. It needs to be ripe. The avocado in my pizza above was baked for about 20 minutes in a 400 F oven. You can see that it held its shape and color. They are a little softer than fresh avocado but not mushy.

In general fruits of all varieties cook fine if you don't overdo it. I normally include chopped strawberries in my pancakes, as an example. They don't change in any way but, of course, pancakes don't cook very long.

Loadsa styrofoam tho! Niece does a food biz and I'm always harping on about biodegradable or compostable food containers but she says they're too expensive 🤔
They are at this point. I picked up another client so I'm not far from ditching the styrofoam. It's part of the plan.

(You should hear all the squeaking when my truck vibrates...)
