Another jar of Pickled Red Onions for the next door neighbors.
Mrs. NDN had said how much she enjoyed the sliced Jalapenos I had put in the las batch of onions ...
Moi: you did? I can do more of that if you like
Mrs. NDN: yes please.
And she knows the rule now, you always return the container you get something in, or you don't get anymore of that!!
Feel you on the jars! They don't give those away!!!
 
Last night. No oh home, so I got a big bowl all to myself. Last of the Doenjang stew for the moment.

Barriehie I have no shame in re-using pickle jars, at least for another type of pickle, not something that needs a "seal" to it.
Mason jars are expensive! Here in Cowboyville AZ, it'a about $16-$17/12 pack for Ball or Mason Jars, I don't buy the knock-off brands.
I did give Mrs. NDN that little 1/2 pint jar, but she knows the rules ...
I was beyond peeved when DH gave some small thing to another neighbor, in my QUART SIZED MASON JAR, WHAT?! You owe me pal!!

Yep, I've got a box full of used jars. You keep somebody's qt-sized jar and it's a blood feud that crosses county lines. 🤨

DH: WHAT?! you forgot to take pictures of your food?
Moi: Yup
*as I set our plates down on the table*
DH: What is this?
Moi: Dunno, I just made this on the fly
DH: WHAT?! There's flies in here?!
*chuckle*
Moi: No dearest, I made this up as I went

I found a 1 pound bag of Sugar Snap Peas, Sweet White Onions and Carrots (I julienned those) all in the vegetable bin in the `fridge.
Defrosted two B/S Chicken Thighs, that I very thinly sliced.
Mise en place
Heated up my ginormous Wok, added some Peanut Oil, stir fried the Veg real quick like, set aside.
Added a touch more Oil and stir fried the Chicken Meat, added back in the veg, along with a boatload of minced fresh Ginger Root and Garlic.
Poured in my Asian Stir Fry Sauce, gave it a stir, bubbled it up, heated back up some of that ever present steam White Rice and dinner was served!

DH: So what are you calling this dish?
Moi: Auntie's Asian Goulash-ish

It's far too early to eat anything yet, but last night I made a paneer (Indian cottage cheese) recipe that I'd tried once before, and loved.
It's called achaari paneer, which literally means cottage cheese cooked with pickling spices. An achaar is an Indian hot pickle, and some of the typical spices (mustard seeds, cumin seeds, fennel seeds, nigella, hot chiles) are used in this dish. A touch of acidity is achieved by adding amchoor - dried mango powder.
