Did you use only semolina?Thin pizza crusts made with semolina flour, topped only with tomato sauce, salt, olive oil and fresh thyme.

I also have pork belly for todayI roasted some potatoes near the fire last night.
By the time they were done, the fire was too low and the remaining wood not dry enough for the marinated belly pork.
So I had potatoes only.
Belly pork is for tonight. Might not go over wood fire as we had 75 mm rain early morning...
I have some in the freezer but it's so pricy I save it for special occasions.I also have pork belly for today![]()

Or a mixture of semolina & wheat flour?
GreatYes I used only semolina's flour. It works perfectly for this rustic and very crispy 'pizza-tongues' (lingue di pizza rossa).
I only dusted the work surface with 00 flour because I had run out of semolina.
