Doesn't soaking the salt cod in milk help to extract a lot of the salt?

I added salt and pepper to the fish prior to poaching. Then added more salt at the table though not a lot.
 
I tend to get obsessed with a recipe.... I also really like pot roast.

This one doesn't look as good. I used a roux instead of a typical corn starch slurry as a thickener, as I think it performs much better and need far less, but it does make it "cloudy" because of the flour in the roux.
