What did you cook or eat today (September 2025)?

When you’ve recovered from your exertions I’d be interested to know whats what with this.
This is called pani puri /gol gappa/pushka - depending on which language you speak.
It's a small sphere of pastry (puri) which inflates when fried. You poke a hole in the top, add a few chickpeas or some potato curry, a dollop of yoghurt, a squeeze of tamarind chutney, a bit of green chile if you like. Then you pour in a little of the green liquid ( pani), which is made with coriander ginger, chile, salt and pop the whole thing in your mouth. It's just a stunning party piece!

It is a delightful looking and sounding.
 
These actually were not very good. The pancake was fine, but the banana in there was meh. I love bananas, but I guess I don't like them in pancakes.
I've found that salt and vanilla extract really bring out the banana flavor. Also honey instead of syrup. And buttermilk in the batter for a slight tang. I wish I could make some for you and change your mind.
 
Learned a neat twist on po boys. Instead of splitting the French bread length wise you cut it into pieces. I got a small loaf and cut it into half. Then you spoon out some of the bread and stuff your ingredients into it. No mess. I will do this from now on.
That's the way we get them in NOLA when you order a po boy.

We've been doing that for years with messy sandwiches that use similar bread. Save the insides in a bag in the freezer for fresh bread crumbs.

The bananas have to be ripe as well. Can't tell if the black is from cooking or if they were, in fact, ripe. I use some brown sugar, besides salt and vanilla, plus I usually add some chopped pecans to give them a Bananas Foster vibe.
