Not a typical cut off the neck. This has very little bone and mostly meat; from the back I believe. Morelo's has the "usual" piece of neck where it's mostly bone, like a spine type part with little meat but lots of flavor and collagen.Espinazo?

Can get that in huge chunks with meat hanging off the size of your forearm at Morelo's but then there's that need teeth thing!
I chop it up and it goes in the air fr*** for Pippi. She only has a few teeth so it pretty much gets minced en route to her dish. I don't have a lot of teeth but the ones I have I want to use. No paper thin slices for me!
Snap, but for some weird reason, I can't abide thick pieces of meat/ham etc. Definitely weird.
I might be compensating for not many teeth by generating a need for teeth.
