Only one recipe? 😶 Curious - which one was that?

Could try a different search engine and search terms? I use DDG. Shredded beef should bring up loads.

Mex/NewMex : Enchiladas, tamales, tacos, burritos, flautas, taquitos, barbacoa & that sort of thing -
Asian - stir fries, noodle dishes, soups, wrappers- like spring rolls e.g.

Seasoned on sandwiches

I had 9 center-cut Beef Shanks. I put them into the Instant Pot to cook until they were fall-off the bone tender.
I picked as much of the meat off the bones and wound up with twice as much meat as what I needed for a double recipe of Beef & Barley Soup.
I'm now left with three cups of pulled Beef.
I've been trying to search the WWW for other recipes to use the rest of this up.
HELP PLEASE?!
My Bing search engine keeps coming up with just one recipe...

There are some recipes for left over shredded beef here (although in fact most of the recipes would work with shredded beef even though they state chopped beef or whatever):

Re your search engine, maybe if you enter 'shredded beef leftovers' you will get better results.
 
Venezuelan carne mechada (which means, pulled meat). Make a sofrito with onions, garlic and some sweet peppers (we use something called sweet chile), add beef stock, and serve with black beans, fried plantains and white rice.
You can also use that meat to make Empanadas & Fillings . and they don't need to be Venezuelan empanadas, they can be the Chilean or Argentinian variety, which are baked.
At a push, you could also make a steak & ale pie, a British classic.

I think the 'search' issue may be that if you search 'shredded beef' you will indeed get loads of recipes. But they are full recipes from scratch not for 'left over' shredded beef. Of course, one can adapt those recipes for leftovers.

Searching for 'left over shredded beef' may yield more direct ideas.

I would go for a hash with potatoes and cabbage.
 
msmofet my first thought was a Beef Ragu, of which I have no reference point ... I think that would be outstanding over DH' Cheese Ravs that I bought frozen for his birthday...

I second this. That sounds like something I would do. What it sounds like is you have basically some "pulled pork" type meat leftover. I would use a BBQ sauce with the meat and put it on a nice bun (maybe brioche or potato) with some pickled red onions (on it, or on the side) with some nice crunchy dill pickles (on it or on the side) and maybe something different like a Parmesan crisp. on there. Or you could also make a type of slaw to put on there as well.
 
In many Mex/NewMex/LatAm dishes shredded meat is actually the main/star ingredient or cooking outcome rather than a leftover

Carne mechada is also known as sobre barriga , in Colombia, and ropa vieja in Cuba and Puerto Rico. There's also something called "pisillo" in Venezuela, which is finely shredded game meat - goat, or capybara.
