Which dried herbs do you use the most?

Which dried herbs do you use the most? Please add any tips or chat about how you use them. Or any details of other dried herbs you use.

One of my favourite dried herbs is epazote (Mexican). Its really different tasting from other herbs - it has an almost petrol taste/aroma. Its brilliant in any bean or pulse dish. I've grown it in the UK with success in the past. It is perrennial.

Bay and oregano, oregano is from my garden, I just dry them out in California sun.

I've got an oregano bush in the garden, and it grows like crazy. When the bush gets out of control, I trim it, strip the leaves from the twigs, and dry it. I also dry mint, which is great for Middle Eastern recipes and Indian kachumbar.
I once had an epazote plant but it died on me and I haven't been able to find another.

I had a Bay and it was out of control, I gave it away. I’m trying to start a few oregano plants from seeds this year, somehow I pulled one plant out because it was in the way of my garden path.

Dried oregano is currently in the lead by a good few lenths. In joint second place are bay and other dried herbs/ herb mixes.
