One of my favourite dried herbs is epazote (Mexican). Its really different tasting from other herbs - it has an almost petrol taste/aroma. Its brilliant in any bean or pulse dish. I've grown it in the UK with success in the past. It is perrennial.
 
I've got an oregano bush in the garden, and it grows like crazy. When the bush gets out of control, I trim it, strip the leaves from the twigs, and dry it. I also dry mint, which is great for Middle Eastern recipes and Indian kachumbar.
I once had an epazote plant but it died on me and I haven't been able to find another.
