Pork - to me, it seems like as a category, it has the most variation. Chops, ground, roasts, bacon, hams, etc…they’re all really distinct compared to each other.

Other than that, I just prefer it. It’s hard to go wrong with pork, AFAIC.

I like bacon. I like gammon ( especialy smoked gammon). And then there is the crackling on a roast joint. Delicious! But I'm afraid of cooking plain pork, such as fillet or chops. It seems to be rather bland in flavour and dry. It may be me, as I am not a great meat cook.
 
Pork chops, you can’t save them in a freezer, you have to eat them right away.
I have to say I eat pork and chicken equally, whichever one that’s on sale at the weekly ad. So I didn’t vote.
 
I save pork chops in the freezer all the time. Why aren’t you able to save them in the freezer?
You can save them, but they will be like eating cardboard. I cook before I save them. It has to have a bit of sauce because freezing is dehydrating.

That’s not been my experience at all. I vacuum-seal them and they freeze fine and taste great.

Does that happen for you with other meats, like a beef steak or boneless skinless chicken breast?

Yes, the key word is vacuum-seal, I don’t do that.
I only freeze in a glass container, if I do freeze, the meat is already cooked in some sauce. I don't freeze beef steaks either.
