One thing I spotted missing from everyone who has posted a list asafetida (hing). Its a fantastic spice to use in curries.
I'll have to see if I can get some. A lot of the supermarkets round here are short on all sorts of herbs and spices. presumably because of the mix of nationalities we have - my tiny road and the neighbouring road has a mix of african, south asian, chinese, and eastern european, some Brits, and me :roflmao: so spices are getting in short supply. My kilo bag of coriander seeds has nearly gone although I still have about half a kilo of hot chilli powder :wink:

It’s one of the main spices in the Chaat Masala spice blend I buy for a potato side dish I make when we have a curry night.

I have bought it on its own before but I rarely used it as we don’t eat many veg curries which is where I normally see it.

I have read it is traditionally used by a vegetarian sect that avoid onion & garlic too.
 
Tell me more please, I make my own Garam masala. Always open for more knowledge.

When I began learning about traditional Indian recipes in 1994 I also learned to despise curry powders - especially the Keens variety, which is all I ever saw growing up. However as I spent more and more time in Indian & Pakistani grocers all over Sydney I noticed all these boxed spices with blends for all sorts of stuff. Biryani, offal curries, Chicken Tikka, goat chop curry, so many things.

I really looked when I had to find chaat masala for a cooking challenge on another (defunct) forum.

When I started pestering other shoppers for tips and watching cooking shows I learned its very common in India for the spice stalls at markets to sell blends as well as individual spices.
 
All finished I think. There are some restaurant sized bottles up high that I can't reach, but I think most of them are on the refrigerator in smaller magnetic jars.
