Which type of rice do you use?

Half is before it's cooked. Cooked is after it is cooked. As you know, rice swells when it cooks,so,you measure the amount that's yielded when it's cooked.

That's a short grain high starch rice that's native to that region of Spain. Try it in a paella, it'll be good in there.

That was my thought as well.
