Croquettes - do you make them from scratch?

Here's today's offering. Classic Spanish "Croquetas de Jamón"
Basically, you make a very thick bechamel sauce, add some chopped Iberico ham, leave the sauce in the fridge to firm up, then make the croquettes, flour, egg and breadcrumbs, then fry in olive oil. This was my first attempt, so they look a bit wonky.
They tasted great, but the next time, I'm going to make the bechamel even thicker and probably use some mashed potato in it as well. I'm also going to add the ham right at the end, rather that cooking it with the sauce.
None left, mind you!
