I did manage to cut up the pineapple I bought at Aldi. Super sweet, juicy, and perfect in texture!

Still coughing. I've got all my ingredients on hand but not quite up to to making my 1st entry tonight. Maybe tomorrow.

Hi, I know has been a while since I've entered the Challenge. Have been having a few life events/changes lately that's been taking up my focus. Nothing bad or adverse, just stuff. But when I saw this month's challenge was pineapple I had to have a go. I love pineapple, one of my favourite things.

Look wonderful. Can you post a recipe for the lollipops and granita. It will be easier for me to copy and print recipes that way. I find it hard write recipes due to arthritis.

I'm finally on the other side of this chest cold so I'm making one tonight I believe. I should have it written up by Sunday, then I've two more planned.

Finally got it done. It really was a challenge for me--creating a new recipe, cooking in someone else's kitchen in a different oven and in a state where it was 100F outside with an AC that was struggling to keep up all day...but I pulled it off and it tasted even better than I had hoped it would.

19 entries and we still have a week to go! I'm loving everything entered and its going to be difficult to judge. There is one thing missing so far though: seafood!

Pineapple has an affinity with seafood (amongst other things). And I love seafood...
