New Year's Day breakfast!

Happy New Year everyone.

Pikelets, maple syrup, strawberries, raspberries and blueberries.
 
My first cook for the year.
Marinating chicken thighs.
Prepped for stir fry with veges from garden
Red onion, cabbage and spring onion.
Store bought.
Shrooms parsnip carrot
Quick 10 min cook in wok. With oyster sauce. 10/10.

I’m doing vegan lunches again this week. Went to prep, and casually asked my husband if he’d like some too - I was astonished when he said sure! (He often rags on vegan food). I made us vegan brown rice, carrot, and edamame bowls, topped with a spicy-tangy almond butter sauce, and some pumpkin seeds and crispy shallots we had hanging around.

We both really liked it!

Antipasti salad. Greens were arugula, watercress, and baby spinach lightly dressed with balsamic and EVOO, S and P. Toppings were from 12 o'clock prosciutto, shaved ParmR, marinated roasted red bell and sauteed onion slices, marinated mozzarella pearls, marinated mushrooms.

I'm doing this again rather than just antipasti alone.
