    Nutmeg

I've been wanting to get some Nutmeg for a long time now to use in Coffee and Desserts. I understand that Mace is made from the shells of Nutmeg and is more polished in flavor and leaves an Orange Color. I've seen Mace compared to Saffron. I was surprised at the expense of Nutmeg. It isn't...

    Rubs

Rubs, I have known, are combinations of spices and possibly, other ingredients which are applied to meats before cooking. For those members who make their own rubs, perhaps you'd be willing to discuss your favorite ingredients and your procedure for applying your Rubs. I have never used a...

    Saffron

Saffron is lauded as the most expensive and celebrated of spices. And oddly enough, its flavoring potential is very soft and easily masked by other things. It can be used as a food coloring, but why pay out that much for a food coloring? Besides using it in Pilafs and other rice dishes, I...

    Compound Butters

Do you make/use compound/flavored butters? I make them fairly frequently, using fresh herbs during the warm months and dried herbs in the colder months. I usually don't get too complex with them, and favorites are basil and dill. I'll also sometimes flavor butter with dried spices, etc. I'll...

    Herbs and spices help

Well, here in Egypt it's kind o hard to find some things that I could find so easily in America. There are some herbs and spices here I don't even recognize either. That's normal though when living in a different country other than your homeland. It's rather hard to find a good resource to...

    All Purpose Seasoning.

I was given this yesterday and haven't a clue what to do with it. I've looked on their website but all it appears to have is the ingredients and nutrition information. Does anyone use this or another brand of similar seasoning (I believe "MasterFoods" is Australian)?

    New home, new spice cupboard

So I've moved house and I've had to rehome all of my herbs and spices. Well mostly spices. My herbs are mainly frozen and I lost everything in the freezer (don't go there, I'm still ready to murder the culprit). I've had to try to fit all of my spices into a new setup and it's been very...

    Which spices don't you have?

I've got a huge collection of spices but there are, I'm sure, some that are missing. For example, I've recently discovered achiote (thanks to @CraigC). I wouldn't have known about it if I hadn't seen it on this forum. So, I suppose you might not know what you are missing - but perhaps there are...

    Your best stuffing mix

Stuffing is traditional in a Christmas turkey but it can be useful all year round. Stuffing balls can be served separately from the meat or poultry and made vegan or vegetarian - which is what I will be doing. I'm still working on some ideas and would love to know your favourite stuffing recipes.
