Ingredients
- 120 gm Potato, scrubbed and cubed, 20mm
- 150 gm Cauliflower, cut 20mm
- 2 tblsp Olive oil
- 1 tsp Cumin seeds
- 100 gm Onion, chopped
- 3 Fresh red chillis, chopped
- 1½ tsp Curry powder*
- Salt and pepper, to taste
- Coriander leaf, chopped
Method
Boil the potato cubes for around 12 minutes. Drain and allow to cool.
Heat the olive oil in a wok. Add the cumin seeds and stir fry for a few seconds then add the chopped onion. Fry the onion until golden brown, around 5 minutes. Add the cauliflower and stir fry for 3 minutes then cover and simmer for a further 3 minutes.
Add the potato cubes, fresh red chillis, curry powder, salt and pepper and mix well, without breaking the potatoes. Cover and simmer for a further 5 minutes.
Sprinkle on the coriander leaf prior to serving.
* Curry Powder
Grind the following in a spice grinder or mortar and pestle:
4 tsp Cumin seeds
2 tsp Coriander seeds
1 tsp Turmeric powder
2 tsp Cayenne pepper
2 tsp Kashmiri chilli powder
