Leeks with bacon and eggs for breakfast. Why not? Most quiche recipes put the custard in a pie crust but here I have put it in cupcake pans and baked it. We had this for snacks today and it will be tomorrow's breakfast. It is simple to make and great to eat.
Ingredients
1 leek sliced
5 eggs
1 1/2 cups grated cheddar cheese
6 slices bacon
1/4 cup milk
1/4 nutmeg grated
salt and pepper to taste
Instructions
Preheat oven to 375F (190C). Apply cooking spray (Pam) to a large skillet. Cook bacon until crisp. Remove bacon and sautee the leek until soft. Place the eggs in a mixing bowl and whisk. Add the rest of the ingredients and fill the cupcake pan(s). Bake until eggs are set and quiche bites are lightly browned - about 20 minutes. Serves 4.
