BACON JAM
Ingredients:
1 kg (2.2 lbs) bacon, chopped (Smoked, back, cured,what ever bacon rocks your boat)
1-2 tbsps lard or vegetable oil
8 cloves garlic, chopped
1 medium (225 gms) onion, sliced
1 tsp hot sauce
350 mls (1.5 cups) freshly brewed coffee (Do not, under any circumstances, use Nescafé)
125 mls (1/2 cup) white wine vinegar
200 gms (1 cup) sugar (again, white, brown, demarara, organically crafted, etc)
1 square dark chocolate (AVOID Cadbury´s, Hershey´s!!)
1/2 cup water (Tap water, bottled water, mineral water,Perrier, Evian, or from the stream at the end of the garden)
1/2 tsp dried sage
1 tsp ground black pepper

Method:
- In a large pan, heat the lard and add the bacon. Fry gently for 15-20 minutes until the bacon releases some of the fat. Remove the bacon with a slotted spoon and set aside. Leave the fat in the pan.
- Add the chopped onions and the garlic and fry until soft.
- Now return the bacon to the pan and add all the other ingredients. Bring to a boil then lower the temperature to medium and cook for about 2 hours, or until the liquid has almost disappeared.
- Blend the mixture in a food processor and bottle in sterilised jars.
