Recipe Baked 6 cheese, Mac & Beer Cheese

Ingredients
1 pound of preferred type of pasta (I used elbow)
Half a large onion, diced
1 and 3/4 sticks of butter- The 3/4 portion set aside for bread crumbs
4 and a half cups of milk --or milk/half and half combination--
2 fresh garlic cloves
1 heaping tablespoon roasted garlic
1 heaping tablespoon granulated garlic
This was my cheese blend, 2 cups of swiss, 1 cup of fontina, 1 cup of muenster, 1 cup of gruyere, 3/4 cup of parmesan, half a package of cream cheese. (IF you can, try to always freshly shred your own cheese. Manufacturers use cellulose in commercial cheese shredding to prevent "caking" so the cheese will stay separated. Unfortunately, cellulose prevents the cheese from its full melting potential.)
1/4 cup of sour cream
3/4 cups of flour
3 tablespoons dijon mustard
1 teaspoon of Worcestershire sauce
2 teaspoons kosher salt
1/2 teaspoon freshly ground pepper
2 tablespoons of hot sauce (I use Crystal, Frank's is overrated)
1 heaping tablespoon heat source (I use an awesome chili flake blend)
About 1 cup of beer (I used Corona)
1 cup of Panko bread crumbs
Paprika (I used smoked Hungarian)
3 tablespoons olive oil or vegetable oil

Directions
Preheat oven to 350
Cook pasta according to package and set aside.
Heat oil in pot and saute onions for about 5 minutes.
Add flour then stir so everything is coated, then add beer to start forming a roux, and cook out for a few minutes.
Add milk steadily, and stir until thick.
Add spices, dijon mustard, Worcestershire sauce, and sour cream.
Start adding cheese slowly so it melts bit by bit.
Use your best judgment here and fine-tune the seasoning to your liking.
Add pasta into cheese sauce.
Put in greased 13x9 baking dish.
Sprinkle paprika on top.
In a separate skillet, melt 3/4 stick of butter, add bread crumbs, absorb the butter and cook low and slow for about 5 minutes to toast butter-soaked bread crumbs.
Add bread crumbs to the top of the dish.
Bake in a 350-degree oven for about 25-30 minutes, until bubbly.

Cool for about 10 minutes before eating.
Severely burn mouth because you have no patience
Go to the hospital and get treated for mouth burns.
Return home and eat more (it should have cooled down to the proper temperature by now).
