Banana chips!

Do you ever use a 'Trail Mix' of some sort when needing a quick, healthy snack?

I'm lucky I get bags of dried fruits and nuts from a company free,and make my own mixes,or add them to my breakfast porridge,but I have a build up of dried banana as its not my favourite
 
We harvested 12 clusters of the Thai variety of bananas - each cluster has at least 20 bananas so you can imagine the bounty. I asked our housemaid if she knows how to make banana chips. What she did was to select the yellow-green (that's half ripe only) and she sliced the bananas in thin strips. And then she lay the chips on a tray and left it under the sun. She said that drying the banana will give it the crispy texture. After some hours of drying under the sun, she deep friend the banana chips. When done, the chips were like casino chips, huh. So hard to the bite and not crispy at all.

Do you have an advice on this matter?
