Turkish Style Stuffed Peppers

Ingredients:
  • 10 - 12 small green bell peppers
  • 1 onion
  • 2 cloves of garlic
  • 2 medium size tomato
  • ½ bunch of parsley
  • ½ bunch of dill
  • ½ cup rice
  • 250 g ground beef
  • 3 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp chili flakes
  • 1 tsp cumin
  • 1 tbsp tomato paste
  • 1 tbsp chili paste
  • 1.5 cup hot water

Instructions:
  1. Trim the stalks of the bell peppers and cut open the top and remove the seeds
  2. Wash and rinse the rice and transfer into a bowl
  3. Peel and finely chop 1 tomato, onion and add them into the bowl
  4. Mince the garlic, chop the parsley and the dill and add into the bowl
  5. Add ½ tbsp of tomato paste, ½ tbsp chili paste
  6. Add the ground beef, olive oil, 1 tsp salt, 1 tsp black pepper, 1 tsp chili flakes and 1 tsp cumin
  7. Using your hands mix the ingredients to combine
  8. Fill the peppers with the mixture with a spoon or piping bag, by leaving a a bit space in the pepper
  9. Do not firm pack as the rice will grow and needs a bit free space
  10. For the sauce, mix ½ tbsp of tomato paste, ½ tbsp chili paste, 1 tsp salt
  11. Add 1.5 cup hot water and whisk until combined
  12. Place the stuffed peppers in a pan with a lid and pour the sauce over the peppers
  13. Slice a tomato and close the top of the peppers with tomato slices
  14. Close the lid and cook until it’s boiling and bring to low heat to let it simmer for about 45 minutes
  15. Once peppers are soft and tender, turn off the heat and let them rest for 10 minutes
  16. Serve with yogurt and pour some extra sauce on top

This recipe is fantastic. You had me at rice (I’m a big fan of rice, whatever).
The use of it just rinsed then combined with other ingredients and the sauce on top reminds me a bit the method of “Tiella Barese” aka Rice, Potatoes and Mussels where the rice isn’t cooked but just added raw or a bit rinsed with other ingredients and when all is combined, the water is added to let it cook in the oven.
