Braised Berbere Pork with Quinoa over Cabbage:

Ingredients:

1) Pork, stewing - 4 Oz.
2) Cabbage - 1/4 head
3) Quinoa (black) - 1/4 cup
4) Onion - 1 to 2 slices
5) Anaheim pepper - 1
6) Tomato, Roma - 1
7) Mushrooms, crimini brown - 6 to 8 medium
7) Berbere spice mix - 1/4 cup


Procedure:

1) Dice the onion and tomato.
2) Cross slice the mushrooms.
3) Quarter the Anaheim pepper lengthwise and cross slice the quarters.
4) Boil quinoa in twice as much water (1/2 cup).
5) Cover the pot, turn off heat and allow to steam and puff.
6) Set the quinoa aside.
7) If necessary, cut the pork into 1/2" cubes.
8) Pan fry the pork.
9) Separate cabbage leaves.
10) Steam cook the cabbage.
11) Set the cabbage aside.
12) Combine the pork, vegetables and a bit of water in a stewing pot.
13) Cook on medium heat, stirring occasionally til vegetables soften.
14) Add the berbere spice and stir the spice in.
15) Stir in the quinoa.
16) Simmer the mixture for about 10 minutes.
17) Cover the bottom of a baking dish with the cabbage.
18) Cover the cabbage with the braise berbere pork and quinoa mixture.
19) Serve.
