Bread & Butter Pudding
(not to be confused with Bread Pudding)
Ingredients:
4 or 5 slices of bread, brown or white (or mixed), crusts removed.
Butter
2 eggs
Half a pint of warmed milk
Sultanas, soaked in boiling water to remove waxy coating and to plump them up.
Demerara sugar
Filling of choice. Blackcurrant jam and a buttercream filling is my preference.
Method:
Butter bread lightly on both sides and cut into quarters.
Arrange in either ramekins, or a 7" pie dish, sprinkling the sultanas and a bit of the sugar between the layers.
Beat eggs lightly and pour in the warmed milk, stirring as you do.
Pour the custard mix over the bread and press down lighlty several times to make sure it is moist all the way through.
Leave to soak in for half an hour.
Sprinkle some Demerara suger on the top for a crunchy finish
Bake at Gas Mk3 for 20 to 25 minutes, or until it looks good!
Enjoy straight from the oven with custard, cream or ice cream.
