Bread Pudding
Serves 8

Ingredients
6 slices good quality white sandwich bread, buttered
4 eggs
1 cup sugar
1 tsp vanilla
Dash of salt
3 cups milk
1 tsp ground cinnamon
8 oz cream cheese
1/4 cup raisins
Pure maple syrup, for serving
Whipped cream, for serving

Directions
Grease an 11-inch x 7-inch baking dish and set the oven to 350F.

Put the buttered bread cubes into the prepared dish. Beat 3 of the eggs with 1/2 cup of the sugar, vanilla, salt, and milk and pour over the bread cubes.

Beat the remainder of the sugar with the cream cheese and cinnamon until smooth, 1-2 minutes, then fold in the raisins.

Spread cream cheese mixture over the bread cube mixture as evenly as possible, all the way to the edges.

Bake for 45 minutes.

Serve cold, room temperature, or warm, with a good pour of maple syrup and/or whipped cream.
