Recipe Butter and amaretto sauteed mozzarella on pine nuts

A nice rich dessert. We saw this on 1 of the Molto Mario with Mario Batali episodes way back when on Food Network.

One 1/4 inch thick slice of a large ball of fresh mozzarella (must be fresh) per serving
pine nuts to coat bottom of each slice
2 Tbsp butter per serving
2 Tbsp amaretto (preferably Disaronno) per serving

Press slice of mozzarella down into a single layer of pine nuts so that the bottom is coated. Melt butter over medium-high heat in a small skillet (don't try to do more than 3 or 4 slices at ounce). Place pine nut coated slice in the skillet with pine nut side down. Fry until pine nuts are lightly browned and edges of cheese are starting to melt. Remove with a spatula onto service place. Lower heat to medium and add amaretto, stirring to mix with the butter and cook for a couple of minutes. Pour syrup over the mozzarella slices and serve immediately.
