Caribbean Chicken with Mango and Banana
(Serves 6)
Ingredients:
800 gms Chicken breast
1 medium onion
2 cloves garlic, minced
1 inch fresh Ginger, minced
2 fresh green chiles, minced (optional if you don’t like it hot)
4 tsps curry powder
300mls coconut milk
1 tsp sea salt
1 fresh, ripe, medium mango
1 large, ripe banana
Coriander leaf for garnish
Oil for frying (your choice)
Method:
(Serves 6)
Ingredients:
800 gms Chicken breast

300mls coconut milk
1 tsp sea salt
1 fresh, ripe, medium mango
1 large, ripe banana

Method:
- Clean the Chicken breast and cut into strips. Dice the onion.
- Heat a tablespoon or so of oil in a large pan and add the onion. Cook for a few minutes until soft, then add the garlic,ginger and chile pepper, if you're using it. Stir once or twice and cook for a minute or so until you sense the aroma.
- Now add the curry powder, stir once or twice, then add the chicken. Coat the Chicken thoroughly with onion/spice mixture; about a minute. The Chicken will begin to change colour.
- Now add the coconut milk and the salt. Bring to a boil. Lower the temperature to medium , cover and cook through for about 15 minutes, or until the Chicken is just cooked through.
- Peel the fresh mango and cut into cubes. Remove the lid from the pan and add the mango. Stir once and allow to cook for a further 5 minutes.
- Peel the banana and slice into rounds.
- Just before serving, add the banana, stir through for a couple of minutes and garnish with fresh coriander leaf.
