Carrot & Raisin Salad

1-2 Servings

Ingredients
:
1 Tbsp. Mayonnaise
1 scant Tbsp. Granulated Sugar
1-2 tsp. Milk
1 C. Carrot, cut into match sticks
1-2 Tbsp. Raisins

Method:
In a small bowl, whisk together the Mayo, Sugar and just enough Milk to thin out the dressing to the desired consistency.
Add in the Carrots and enough Raisins to your liking; stir gently to thoroughly coat the Salad.
Cover and refrigerate until serving

TastyReuben very old-school dish, wouldn't you say?
My Mother hates Raisins, so thankfully, I only had to eat it at school.
We had school-provided hot lunch each school day and you had to eat what was on your plate, or no dessert, and the lunch-ladies made some of the best from-scratch-made sweets! That's what got all the kids to finish their lunch ... first question out of every kids mouth as they walked into the lunch hall, "What's the dessert today?"

Yeah, definitely. I always assumed it was a 1950’s suburban housewife thing.

I know in the ‘70’s, that stuff was everywhere - every cookout, family gathering, restaurant menu…sometimes it also had pineapple in it.
