It's used as a thickener as are okra and roux. Be sure to add it when the pot is off the heat and cooled some or it will just turn into expensive clumps.

Btw, the word gumbo translates to the same Swahili words for okra, which was brought to the America's by mostly people's of East Africa.

I have a mini 6-pack but I use them to make boiled peanuts. I quit drinking things like that as a beverage around 20 years ago!
