Okay, that's enough to go on thank you. That's a lot of sauce!

It is. That's why I give it to people - it does last an age tho. I've got my plain chile hot sauce quantity
down to two 8oz bottles and that lasts a while even tho it's used pretty regularly.

Salt fermentation is lactobacillus.

It would work....
Maybe I should use it to make Tajin paste
