Chicken Posole:
NOTE: This is also known as Chicken Pozole outside the USA.
Ingredients:
1) Chicken half breast - 1
2) Hominy - 1/2 cup
3) Cabbage - 1/4 cup
4) Jalapeno pepper - 1
5) Shallot - 1
6) Tomato, Roma - 1
7) Garlic, minced - 2 tblspns.
8) Chicken broth using better than bouillon (BTB) - 1 tblspn.
9) Oregano - 1 tspn.
10) Cumin - 1 tspn.
11) Paprika - 1 tspn.
12) Chilli powder - 2 tspns.
13) Anise seed - 1 tspn.
14) Radish - 1
15) Cilantro, fresh - as desired.
16) Water - 2 cups
Procedure:
-- Preparation --
1) Cut the chicken breast into 1/4 to 1/2" pieces.
2) Slice a thin section out of a cabbage and separate into strips.
3) Cross cut the jalapeno pepper.
4) Dice the shallot and the Roma tomato.
5) Cut the radish into thin slices for garnishing.
6) Clean up the cilantro into sprigs for garnishing.

7) Boil the chicken pieces in water.
8) Add hominy, cabbage, pepper, shallot, tomato, garlic and spices.
9) As vegetables becomes soft, add BTB.
10) Continue to cook for 5 to 10 minutes.
11) Ladle into soup bowls.
12) Garnish on top with a few radish slices.
13) Garnish on top with a few sprigs of cilantro.
14) Serve.
