Chips (Fries) with...?

What do you eat chips (fries in US) with? In the UK, salt and vinegar is 'traditional' especially when they are served with fish in batter (fish and chips). They seem to always be served alongside burgers too, in which case tomato sauce or mayo is often added. Chips with curry sauce is another British thing.

So, the question is: what foods do you serve with chips and/or what condiments do you serve with them? Is it chips with everything?

Fries are served with many dishes and many varieties. You have steak fries, curly fries, waffle fries, thin fries and shoe string fries, probably many more. Then you have different root vegetable fries, like sweet potato, etc.
 
Twice fried chips here, with choice of tomato sauce, BBQ sauce and aioli. My granddaughters fave. Vinegar if I feel like it. Other types as Craig said, curlys etc. aioli is big here though.

In the Midlands we get a choice of gravy, curry sause or mushy peas. I dont see the appeal as they make the chips soggy. If eating chips on their own I prefer just salt and vinegar but mushy peas are lovely as a side dish to fish and chips.

I'm a simple guy , that second pic would do me, nothing like eggy chips. With Worcester sauce of course.
