Chocolate Banana Kolaches:

NOTE: Kolaches are a traditional Czech pastry which may vary in size and filling. They are generally fruit filled, but any filling, including meats, is possible.

Ingredients:

1) Banana divided - 1
2) Flour, unbleached - 2 cups
3) Sugar, brown - 2 tblspns.
4) Yeast, active dry - 1/4 Oz.
5) Cocoa powder - 1/8 cup.
6) Half n half or milk - 1/4 cup
7) Cream cheese - 2 tblspns.
7) Butter - 3 tblspns.
8) Egg, yolk - 1
9) Chocolate Bar - as required
10) Banana chips - as required
11) Honey - 1 tblspn.


Procedure:

1) Peel the banana and slice it into 1/4" slices.
2) Mash about 6 tblspns of banana and set aside.
3) Crush the banana chips and set aside.
4) Separate the egg yolk.
5) Warm the half n half or milk to approximately 85F.
6) Melt the butter and set aside.
7) In a mixing bowl combine the milk, sugar, yeast and 1/8 cup flour.
8) Mix the combined ingredients well.
9) Let sit covered till yeast activates and goes frothy.
10) Mix in the remaining flour and cocoa powder.
11) Form the dough and allow to rise to about double size.

NOTE: The first rise may take as much as an hour.

12) Mix in the melted butter, 2 tblspns. mashed banana and egg yolk.
13) Knead the dough by palm pressing it on a floured surface.

NOTE: Knead the dough for no less than 10 minutes, folding the dough in the process, until soft and pliable.

14) Separate the dough in approximate six dough balls.
15) Fit the dough balls on parchment paper on in a muffin mold.

NOTE: If a mold is used, oil the sides and bottom to prevent sticking.

16) Punch down the center of each dough ball.
17) Blend the remaining mashed banana with the cream cheese.
18) Fill the center of each kolache with banana/cream cheese blend.
19) Top the center of each kolache with banana slices.
20) Preheat the oven to 375F.
21) Bake the kolaches for approximately 20 minutes.
22) Melt the chocolate bar and mix with honey.
23) Remove the baked kolaches from the oven.
24) While still hot, cover the banana fillings with melted chocolate.
25) Sprinkle on crushed banana chips.
26) Allow to cool enough that the chocolate solidifies.

NOTE: Slightly chilling the kolaches by refrigeration for 5 to 10 minutes is worth consideration.

27) Serve.
 
I intentionally acquired a 12 cup cup cake/muffin mold to do this recipe.
