Cooking a rack of lamb

The original plan was to do a stuffed saddle of lamb but the butcher said he had a better piece for me (the above rack) so I went with that instead. So next up I may return to the original idea. Although I've always wanted to give belly of pork a go. One of my favourites being this one from Lord Ramsay too:


Although I'm not a fan of aniseed and if it give quite a strong hint of it, I'll probably give adding the star anise a miss (as well as the extra fennel seeds). So potentially that one. May return to lamb and do a leg on a trivet of veg since Easter is fast approaching. I'll be sure to post pics!
