Cookingbites Recipe Challenge: Bacon

I didn't want to post a recipe for buckwheat pancakes which cracks when folded... I need to try again with adjustments. For the vegan version see here (they cracked a bit but not so badly): Galettes De Sarrasin (Buckwheat Pancakes)
The recipe I used for galettes saucisse last week was ever so easy - I'm usually very good at ruining pancakes! 550ml whole milk, 225g buckwheat flour, 2 eggs, 1 tsp salt. Hope this helps!

No butter? The pancake actually looked OK before I tried to fold it:
