CookingBites recipe challenge: Mushrooms

Over here they're between $16-18 per kilo.
Yeah, we pay similar prices over here.

Shiitake are $6.90 for 100g. AU$2 = 1GBP.

It is one of the reasons I prefer to grow them.


Flat white or flat brown are AU$14 /kg which is not as bad but still compared to the UK, it is expensive.

I can't get any oyster mushrooms at all unless I shop elsewhere.
 
Are you referring to all mushrooms, or the more common ones in a can or jar? Those are packed in water, and even I find them gross, but real mushrooms that you cut from whole (shiitake, cremini, etc.), those, even in sauces or whatever, have a much better (less "slimy") texture to them, and they are awesome on pizza because they dry out a bit and the edges develop a good texture that is very plesant with pizza.
I’ve tried mushrooms made many different ways before (usually cooked from fresh, I don’t think I’ve had a canned mushroom), and nope - not a fan. Don’t like them raw either.

I have really tried to like them for many years (my husband would be thrilled if I changed my mind on them), but it hasn’t worked. They are one of very few vegetables I don’t like (the others being parsnips and fennel).
 
Well, there are many ways to use them as a puree. And don't forget you can use dried. They can be whizzed up into 'mushroom dust' which can then be used to great effect. Or you could soak dried mushrooms and use the soaking juice.

How do you feel about them raw?
I was going to suggest dried and ground into powder. I've made fresh pasta using dried and ground porcini.

King oyster mushrooms have a very meaty texture, unlike the softer, spongy texture of button or crimini. Tree mushrooms that are in a lot of Asian dishes rehydrate into an almost squid/calamari texture. Even fresh, regular oyster mushrooms are a little more firm in texture.

Oh, and I don't know if detroitdad will allow this, or even if it is needed, but I subbed black garlic cloves for mushrooms when I was making a dish for someone who was highly allergic to mushrooms.
