Creamed Eggs with Ham
Makes 4 servings
Ingredients
3 TB butter
3 TB all-purpose flour
1/2 tsp dry mustard
1/2 tsp salt
1/4 tsp ground black pepper
2 1/4 cups milk
1 cup diced deli ham
4 hard-boiled eggs, peeled and quartered
Directions
Melt butter in a saucepan set over low heat. Stir in flour, salt, pepper and mustard. Cook, stirring constantly until mixture is smooth. Remove from heat and stir in milk. Stir in milk, stirring constantly until mixture boils.
Turn down heat and gently stir in eggs and ham.
Taste for seasoning and serve warm over (American-style) biscuits, toasted English muffins, or toast.
