Recipe Creamy Raw Cashew Nut Garlic Sauce

This is a recipe that we have used quite a lot and enjoy. It is adapted from a recipe from the NouveauRaw site for a creamy garlic dill sauce.

Ingredients:
  • 1 cup raw cashews, soaked 2 hours (or overnight)
  • 1/2 - 1 juice of a lemon
  • 2 tbsp olive oil
  • 4 tbsp water
  • 3 cloves garlic chopped
Preparation:
  1. Place the cashews in a glass bowl, along with 4 cups of water and soak overnight ideally, otherwise for a minimum of 2 hours. You are looking for the cashew nuts to be soft to the centre to blend more easily.
  2. Drain and rinse the cashew nuts and then place in the blender/liquidiser along with the rest of the ingredients and blend/liquidise until a creamy sauce is created. It helps to have something like a Vitamix or Omniblend here.
  3. Taste to see if seasoning is needed and serve with pasta.

Man I am not vegan or vegetarian but that sauce sounds FANTASTIC! I have to try this one. but will not tell hubby what it is. He hates anything healthy!! LOL
