Hello,

I recently discovered homemade date paste. As well as being good for sweetening dishes and desserts, it's healthier and less harmful than refined white sugar.

And best of all, it's easy to prepare.

Recipe for date paste :

Ingredients


  • Pitted dried dates: 250 g
  • Water: 200 ml
  • Vanilla extract: 1/2 teaspoon

Preparation

  1. Place the dried, pitted dates in a saucepan with boiling water (200ml) to soften them.
  2. Leave the dates to stand in the hot water for 15-20 minutes, until they are soft.
  3. Place everything (water + dates) in a blender and add the vanilla extract.
  4. Blend until you obtain the desired texture (paste). Add a little water if necessary.

I like the idea of doing that, but the likelihood of me using a decent sized batch quickly enough seems remote.
Any idea's how long the home made date paste can be stored?

I use various types of Billingtons unrefined sugars presently.
