Eating rare or raw meat (or fish)

I like my steak medium-rare, but my burgers medium-well or more. It is not just a food safety thing, but a texture thing. I don't like the way a rare or medium-rare burger feels in my mouth. It feels mushy.

I often make smashburgers, so I get well done whether I want it or not. I like that crust. But, then again, a medium rare steak isn't properly cooked without a nicely seared crust, IMO.

What are smash burgers? Squashed burgers?

I'm surprised those are not a thing over there.

You take a round ball of beef, season it, put it in a heavy skillet (ie. cast iron) on fairly high heat, and literally smash the beef with a strong spatula. It cooks in a few minutes, being so thin.

You get a really thin burger with lots of crust.

Yes, that is a US chain. I guess they are getting to the UK. They did not invent the Smashburger, but have even it new and broader popularity.

Smashburgers are the exact opposite of "raw or rare meat."

Steak 'n' Shake, a midwestern US fast-food chain, has been doing smashburgers since before there were smashburgers. Funny how times change, because smashburgers are a huge trend right now, but the number one complaint against SnS was always that their burgers were too thin! :laugh:

I have no idea what "rear" meat is. At any rate, the problem with SnS burgers was not the thin patties which I love, it was the lack of crust, or that thin crunchy edge. They were just meh lol. Last time I was there they had upped their game considerably. The burgers were top notch.
 
I know I've mentioned it before, but my grandad used to sample the raw ground pork when we'd make sausage after butchering a hog. He and my dad would mix up a huge plastic-lined box filled with fresh ground pork, with all the seasonings in it, he'd get a hunk, eat it, and say, no it needs this or no it needs that, until it was just right.

I do always notice when we're in the UK, a lot of the places that serve beef burgers will have a little notice along the bottom of the menu about eating undercooked beef burgers, so therefore, the beef burgers are cooked all the way through to a safe internal temperature, blah, blah, blah.

We have a similar notice here, but it's more in the way of a disclaimer - "The USDA has determined that eating undercooked burgers may pose a serious health risk; patrons to do at their own risk."

They also tell us not to eat raw cookie dough, cake batter, or consume undercooked eggs, but that ain't happening, either. :laugh:
And the same disclaimer is for fish, shellfish, and other seafood. And I know you don't even like it cooked, but I love sushi :D

I gues this is sort of on topic, but I don't mind the "raw" part of sushi. I just don't like the same flavors Japanese people seem to like. I especially hate that seaweed wrapper. It's like eating paper.

I would try steak tartare at least once, to be fair in my judgment of it. It would have to be prepared by a professional chef with plenty of experience with the dish.

I know I've had carpaccio of beef, but don't recall when or where.

I guess this is sort of on topic, but I don't mind the "raw" part of sushi.

I changed the title of the thread to include fish - so you are now on topic!

I'm not over keen on sushi - I find its always too much rice. I maybe have had bad sushi.
