Yes, longer the cooking time the more the oligosaccharides are broken down Soaking doesn't get rid of them to any great extent I've found. It mainly reduces the cooking time bc the the beans are fully hydrated. It's obviously a big consideration for some people for various reasons.

I first tried no soak from a Rick Martinez recipe for Frijoles Olla that came with his green chilie pork stew where he says a lot of Mexicans don't soak beans and that it's his preference - big advocate of not soaking

I found an article contributing to the long cooking method and what it does but it also says that presoaking also removes some of the offending soluble fiber.

Huge difference when long cooking I've found personally. No comparison - but that's for me.
 
I was under the impression that pre-soaked beans were easier to digest.
Got to do some researching now ;)
Funny thing: there are 2 schools here.
The locals don't soak theit beans. They don't like them that way.

I think I've reached a point where since I eat beans so regularly, and other 'farty' foods, my gut biome has adapted so I'm not nearly as afflicted as before. I eat fermented foods, mostly yogurt, multiple times a day and I think that helps too.

I'm impatient so I soak. Plus, it happens while I'm asleep. 👍🤠

Until they're cooked to how I want them - not being facetious btw!
If I'm adding to a dish that cook further, then less time.

Generally tho, about 3-4 hours from when the water boils - until the skins are still intact and the middle is creamy. Bear in mind tho that I'm at highish altitude 5500ft/1700m and that everything takes longer to cook when boiled, so maybe an hour longer than at sea level?

You know I eat beans regularly and I think because I soak them, I don’t get the gas either. But I’m blessed, I don’t have stomach problem, i.e. digestive problem. I’m a see food person.

Me neither on digestive issues. Only thing I can't eat is something I can't chew, but I'm inventive... 🤠

If I forget, however, I cover them with water, bring to a rolling boil for 3-4 minutes, then turn off the gas. A couple of hours later, I cook them and they're fine.
I've never had a issue with digesting them either, but I eat loads of beans and lentils every week.

I get the majority of my protein from beans. I've got around a dozen different ones, dried in bags, to keep the variety up. I eat beans most everyday.
