I based this recipe on my usual fishcakes. These would look prettier using a soft boiled egg (but it is one of my few food fears - not seeing what I am eating).

Ingredients
- 1 poached salmon fillets (I poach in the microwave)
- 1 potatoes boiled and mashed
- 2 spring onions
- parsley
- salt and pepper.
- 3 Eggs
- Panko breadcrumbs (I used gluten free
- flour (I used gluten free)
- Flake the salmon and remove skin and bones
- Lightly mix salmon with the potato and other ingredients.
- Set aside to cool enough to handle
- Lightly poach two eggs in cling-film. Put straight into cold water
- Beat the third egg
- Pour flour and panko into separate bowls.
- Pat dry eggs
- Dip eggs in flour
- Flatten out fish cake mixture.
- Put egg in center and fold in fish cake mix to encase egg.
- Dip in egg then panko
- Deep fry until golden (takes about a minute)
