Freezing and thawing a cake made with cacao butter

This worked for me. I had planned to use 250g of quinoa flour, but out came 260g. I plan to add a bit more cacao next time, but there was no problem of clumps of fat after thawing. I forgot the vanilla extract and it was still fine.

Dry Ingredients

260g quinoa flour
130g sugar
30g truvia
53g cacao powder
2 tsp baking powder
0.5 tsp baking soda
0.5 tsp lo salt
0.5 tsp mild chilli powder
18g macaroot
18g paprika (smoked if preferred)
1 tbsp (10g) Psyllium husk powder

Wet Ingredients

350ml warm water
80g melted cacao butter

Directions

Preheat oven to 350 degrees F. Grease a 9-inch round cake pan with oil.
In a medium-sized mixing bowl, whisk together the dry ingredients and set aside.
Add the water and stir in.
Add the melted cacao butter and stir vigorously.
Pour batter into the cake pan and bake for about 30 to 35 minutes.
