Recipe Garlic Butter Bombs

These little bombs of flavour would be perfect with seared steak, grilled chicken or steamed fish. If the idea of deep frying butter horrifies you, think of this as Chicken Kiev, minus the chicken. Each bomb is a little less than 100 calories. To make it vegan use a solid vegan margarine such as Tomor.

Ingredients (makes approximately 9 -10 bombs )
2 cloves of garlic
100g butter
1 tbsp chives (or other herb of choice)
1 egg beaten
2 tbsp flour
4 tbsp dried breadcrumbs
Oil for deep frying

Method
  1. Soften the butter and add minced or grated garlic and herbs, mixing well.
  2. Chill and then shape into balls a little smaller than a walnut.
  3. Place the balls in the freezer until frozen thorough.
  4. Place flour, beaten eggs and breadcrumbs in separate bowls.
  5. Coat the balls in flour, then egg, the breadcrumbs'
  6. Repeat again so each garlic butter ball has two coats.
  7. Deep fry for a few minutes.
