Hey All!
Sorry for being AWOL.
Not a feat of culinary expertise. Just a family favorite.
I rarely cook for more than two so adjust to suit your family.
Ingredients
2 or 3 medium, skin on, red potatoes
3 or 4 cloves garlic smashed and minced
1/2 stick (1/8th lb) room temperature butter
1 TBSP heavy cream (more if potatoes are too dry after adding cheese)
1/2 cup grated Parmesan Regiano or Assiago (I like hard, pungent cheeses but you can use what you like. Gruyere is also a good choice)
Chicken Broth/Stock or water
1 strip cooked, crumbled bacon
1/2 cored, minced jalapeno pepper
1 thinly sliced scallion, whites and greens
Sea Salt/Kosher Salt and fresh ground pepper
Method
Scrub the potato skins and cut into 1" cubes
In a sauce pan add enough broth/stock to cover potatoes (if using water salt heavily)
Add minced garlic
Bring to a boil and cook until fork tender
Drain (do not discard garlic)
Return to sauce pan on low heat
Add butter, cheese, cream and jalapeno
Smash with a fork or potato masher (do not use mixer, whisk or blender.)
If the potatoes are dry add more butter and/or cream
Stir in bacon and scallions
Taste
Add black pepper (lots)
Add salt if needed (if you used chicken broth/stock salt may not be needed.)
Just for fun you can add 1/4 tsp. grated fresh ginger instead of jalapeno
Try different spices: smoked paprika or cayenne or curry or chili powder
You can cook the same thing over and over but have a different dish each time depending on what you add. Just have fun with it.
With G's weight issues I rarely make this dish. When I do it is a special treat for my love.
